This is the inspiration behind Chef Gonzalo Martinez’ remarkable menu for QUINCE: an international cuisine accented with Mexican flavors, uniquely interpreted and created with the finest local ingredients.
A native of San Miguel de Allende, Chef Gonzalo was most recently part of the management team and executive sous chef at the Rainbow Room in New York City. He began his career in Texas where he gained extensive experience in both fine dining and large-scale event culinary presentation at arguably some of the finest restaurants and hotels in Dallas, Texas. Returning to his home, Chef Gonzalo combines his thorough knowledge of international cuisine with his desire to create contemporary Mexican cuisine.
